This weekend I tried my hand at homemade pizza on the Grill Dome and I must say WOW! This kamado performed flawless yet again. If you haven't cooked on a Grill Dome Kamado you must get one.

Smoked Chicken Quesadilla on the Grill Dome - A Diner's, Drive-in's, and...



My first cook on the new Grill Dome. I decided to make a recipe I saw on Triple D from a place called Elks Public House in Spokane Washington. The Grill Dome performed flawless, holding temps and allowing to cook on one batch of charcoal all day.

Smoked Onion Dip
Ingredients
5 cups hickory wood chips (or chips of your choice)
5 medium onions, or 4 cups smoked onions
4 cups mayonnaise
2 cups sour cream
1 cup milk
3 tablespoons Worcestershire sauce
2 tablespoons black pepper
1 tablespoon sugar
1 tablespoon salt, plus more for seasoning
1/2 teaspoon liquid smoke
Directions
Soak the hickory chips in water for 30 minutes, and then drain. Place the soaked chips in a stovetop smoker or outdoor smoker over medium-high heat. Peel and quarter the onions and place in a perforated pan. Cover with tin foil, poke a few holes in it, place in the smoker, and smoke for 1 hour. Your onions should be soft and have a nice brown color. Tasting the onions for smoke flavor is the best way to check for doneness, not all smokers are the same. When the onions are smoked, transfer to a food processor and puree until smooth. Cool. Combine with the rest of the ingredients. Mix well and taste for salt.

Sal from Root Boy Cooks shares this great BBQ sauce recipe..

RootBoy’s Spicy Caribbean BBQ Sauce

I would like to share my recipe for Spicy Caribbean BBQ sauce. The ingredients you will need are:

1 diced onion

1 diced jalapeno
The juice of 1 lemon or 1 lime or both
1 cup of ketchup
1 cup of molasses
4 cloves of garlic
½ cup of apple cider vinegar
1 tablespoon of Jamaican Jerk Seasoning
1 cup of spiced Rum
Sweat the onions and jalapeno pepper down in a small sauce pan until translucent. Add ketchup, molasses and apple cider vinegar and simmer for about 15 minutes. Add Jamaican Jerk seasoning, 1 cup of Spiced Rum (any Rum will do in a pinch) add four cloves of garlic. Simmer for an additional 20 minutes, slathers this on chicken, ribs, or whatever you got. Don’t forget to save some Rum for the Pit master!
