Seared Blue Fin Tuna Recipe on the Island Grillstone
Seared Blue Fin Tuna cooked on the Island Grillstone.

Marinade:
1/4 cup dark sesame oil
1/4 cup soy sauce
1 tablespoon grated fresh ginger
1 garlic clove, minced
1 green onion, thinly sliced (a few slices reserved for garnish)
2 tablespoons sesame seeds, toasted
Ginger Soy Dressing
Ingredients:
3 tablespoons white wine vinegar
1 tablespoon soy sauce
1 teaspoon Asian sesame oil
3 tablespoons sugar
1 teaspoon minced garlic
1 teaspoon fresh ginger root, minced
1 teaspoon cayenne pepper
1/2 teaspoon black pepper
1 cup mayonnaise
Instructions:
In a small bowl, combine and thoroughly mix white wine vinegar, soy sauce, sesame oil, sugar, minced
garlic, minced ginger root, cayenne pepper, and black pepper. Gradually whisk in mayonnaise until
completely blended.

Smokehouse Brisket Sandwich Recipe from Arby's - My way!
Arby's came out with a Smokehouse Brisket sandwich which was a limited offer. I never got a chance to try one so I decided to do my version of the sandwich. I fired up the Grill Dome Kamado and threw on a 7lb brisket which I injected with beef stock and duck fat. I must say it was one of the best sandwich I had in a long time. You must try this.

Ingredients
1/2 Cup Heinz Ketchup
1 Cup Water
1/4 Cup White Vinegar
3 Tbsp Worcestershire Sauce
2 Tbsp Brown Sugar
1 Tsp Onion Powder
1 Tsp Garlic Powder
1/2 Tsp Paprika
1/8 Tsp Cayenne Pepper
Corn Starch Mixture:
1 Tbsp Corn Starch
2 Tbsp Water

Game Hens with Apricot-Sriracha Glaze Recipe on the Pit Barrel
This weekend I get to finally try out my new spit that my pa-in-law made for me. I did some Cornish Games Hens with a Apricot-Sriracha glaze and did it all on the Pit Barrel Cooker, Check it out.

Apricot-Sriracha Glaze Recipe:
3 Tbsp Soy Sauce
5 cloves minced garlic
1/3 cup Apple Cider Vinegar
1/4 cup Mirin
1 Cup Apricot Preserves
3-4 Tbsp Sriracha or more to taste
Salt and Pepper to taste.

Smoked Meatball Sub Sandwich recipe
This weekend I kicked up another awesome sandwich. I put together a meatball sub all on the Weber Kettle.
Meatballs
1 pound ground beef
1 pound ground pork
1 onion chopped
2 eggs
1 cup freshly grated Parm cheese
1 1/2 tablespoons chopped Italian flat leaf parsley
Salt and ground black pepper to taste
2 cups stale Season croutons, crumbled
1 cup of milk
Marinara Sauce
1 tsp olive oil
2 cloves garlic, smashed
2 - 28 oz. can crushed tomatoes (I like San Marzano)
2 Tbsp. shredded carrot
Tbsp. Sugar
2 tbsp. chopped fresh basil
Salt and fresh pepper to taste
Sauté onions, carrots, and garlic until onions are translucent. Add the crush tomatoes, salt and pepper. Simmer for 2 hours. The last 30 minutes add the basil and sugar.
