St. Louis style ribs and TriTip on my new smoker.





This is my first cook on my new trailer smoker. I decided to do  St. Louis Style Ribs and a Beef TriTip. Both came out just about perfect.

Jamaican Jerk Burger Recipe on the Mojo Griddle

 



This weekend I fire up the Mojo Griddle and make some outrageous Jamaican Jerk burgers.

Jamaican Jerk Paste
Ingredients:
1 scotch bonnet seeded
2 green onions
2 teaspoons thyme
2 cloves garlic
2 teaspoons allspice
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon pepper
1/2 teaspoon salt
1 tablespoon brown sugar
1 tablespoon orange zest
2 tablespoons white vinegar

Recipe:

Adobo rub -

4 teaspoons chili powder, preferably made with New Mexico or ancho chiles

2 tablespoons lime juice

2 tablespoons extra-virgin olive oil

1 teaspoon ground cumin

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon freshly ground pepper



Tomatilla Salsa

2lbs Fresh Tomatillos

2 med onions

1 large jalapeno or 2 small ones

2 California Chilies (Anaheim Chilies)

4 cloves garlic chopped

1/2 cup of cilantro compacted

1/4 cup fresh lime juice

2 tbsp apple cider vinegar

1 tsp cumin

1 tsp white pepper

1 tsp black pepper

1 tsp oregano (Mexican Oregano preferred)

1 tsp Kosher salt
