Smoked Chicken Quesadilla on the Grill Dome - A Diner's, Drive-in's, and...
My first cook on the new Grill Dome. I decided to make a recipe I saw on Triple D from a place called Elks Public House in Spokane Washington. The Grill Dome performed flawless, holding temps and allowing to cook on one batch of charcoal all day.

Smoked Onion Dip
Ingredients
5 cups hickory wood chips (or chips of your choice)
5 medium onions, or 4 cups smoked onions
4 cups mayonnaise
2 cups sour cream
1 cup milk
3 tablespoons Worcestershire sauce
2 tablespoons black pepper
1 tablespoon sugar
1 tablespoon salt, plus more for seasoning
1/2 teaspoon liquid smoke
Directions
Soak the hickory chips in water for 30 minutes, and then drain. Place the soaked chips in a stovetop smoker or outdoor smoker over medium-high heat. Peel and quarter the onions and place in a perforated pan. Cover with tin foil, poke a few holes in it, place in the smoker, and smoke for 1 hour. Your onions should be soft and have a nice brown color. Tasting the onions for smoke flavor is the best way to check for doneness, not all smokers are the same. When the onions are smoked, transfer to a food processor and puree until smooth. Cool. Combine with the rest of the ingredients. Mix well and taste for salt.

Spicy Caribbean BBQ Sauce
I would like to share my recipe for Spicy Caribbean BBQ sauce. The ingredients you will need are:
1 diced onion
1
diced jalapeno
The
juice of 1 lemon or 1 lime or both
1
cup of ketchup
1
cup of molasses
4
cloves of garlic
½
cup of apple cider vinegar
1
tablespoon of Jamaican Jerk Seasoning
1
cup of spiced Rum
Sweat
the onions and jalapeno pepper down in a small sauce pan until translucent. Add
ketchup, molasses and apple cider vinegar and simmer for about 15 minutes. Add
Jamaican Jerk seasoning, 1 cup of Spiced Rum (any Rum will do in a pinch) add
four cloves of garlic. Simmer for an additional 20 minutes, slathers this on
chicken, ribs, or whatever you got. Don’t forget to save some Rum for the Pit
master!

Chiko Roll - A Classic Australian icon
The Chiko Roll is an Australian savoury snack, originally called the chicken roll and inspired by the Chinese egg roll and spring rolls. It was designed to be easily eaten on the move without a plate or cutlery. The wrap was designed to be unusually thick so it would survive handling at football matches. It was originally modeled on an Asian competitor's Chop Suey Roll. At the peak of their popularity in the 1960s and 1970s, forty million Chiko Rolls were sold annually in Australia and the product has been described as an Australian cultural icon.

Homemade Andouille Sausage
5# Boston Butt trimmed of tough connective tissue and cut into 2 inch cubes.
Here I hand chopped half of the meat into 1/4 inch pieces for texture, and ground the rest.
Spice Mixture:
2 tsp. of Cayenne or to taste
1 Tbsp. Paprika
1/4 Cup Chopped Fresh Garlic
1/8 Cup Fresh Ground Black Pepper
3 Tbsp. Kosher Salt
1 Tbsp. Fresh Thyme leaves, chopped
1 tsp. Crushed Red Pepper
1 tsp Cure #1
½ cup water

This weekend I made Caribbean style ribs with a mango rum BBQ sauce. It had a nice kick to it. I paired it with a smoked cocktail.

Smoked Ice.
I place some ice in a bowl and put it on the smoker for about 30-40 minutes then removed it to cool off. I then poured the water into ice trays and re-freezed for 8 hours.

Brazilian Sandwich - Bauru
Bauru is a popular Brazilian sandwich. The traditional recipe calls for cheese (usually mozzarella) melted in a bain-marie, slices of roast beef, tomato and pickled cucumber in a French bun with the crumb (the soft inner part) removed.
The Bauru has a fairly well documented history. In 1934, a student at the Faculdade de Direito do Largo de São Francisco, in São Paulo, Casemiro Pinto Neto (known as Bauru for coming from the city of the same name in São Paulo state), entered Ponto Chic, a traditional eatery and student hangout, and asked the cook to prepare a sandwich from his specifications. "Bauru's Sandwich" was an immediate hit, and eventually became the best-selling dish at the place.
Many other eateries, though, offer sandwiches named Bauru with different combinations of ingredients -- for instance, using sliced ham instead of roast beef or sliced bread instead of French bread. The city of Bauru eventually named the traditional Bauru as the city's official sandwich, codifying the recipe in a municipal law and instituting an official certification program.

Jack Stack BBQ sauce and rub review - Baby Back Ribs
This week I was surprised to receive a package from Jack Stack BBQ in Kansas City MO, with 3 bottles of sauce and 3 bottles of rub. I tried Jack Stack on some good ole fashion baby backs. The sauce tastes sweet and tangy, a nice mix of tomato, brown sugar, Worcestershire, and spices. A very traditional Kansas City sauce. The rubs were a bit on the salty side for me but had some good flavor. Overall I believe the rubs would add another flavor level to a sweet rub. The steak rub has some heat with a touch of sweetness. Good flavors all around.

Homemade Brats - Another game day meal on the Weber Grill!
Homemade Bratwurst on the Weber
5 lbs ground pork or 4lbs ground pork and 1 lb bacon
1 TBS ground coriander
1.5 tsp good paprika
1 tsp ground black pepper
2 TBS Kosher salt
2 tsp dried rosemary
4 tsp sugar
2 tsp cayenne pepper
1 TBS sage
1.5 TBS dry mustard
1 tsp nutmeg
1 cup cold water - I used about 6 garlic gloves blended with 1 cup of water.
Mix all spices and cold water together and mix well into meat. Stuff hog casings and form links. Use or freeze promptly.
Brats beer mixture
1 white onion, thinly sliced
1 green pepper de-seeded and sliced thin
3 tbs butter
2 bottles of dark beer
1/2 cup brown sugar
1/4 cup apple cider vinegar
1/2 tablespoon fresh ground pepper
