Salt and Pepper Hamburger Bun Recipe
This video was inspired from a visit to CheeseBurger In Paradise on the island of Maui. There they used salt and pepper buns on all their burgers. I create a little twist and use Hot Black Lava Hawaiian sea salt. The recipe comes from Stella Culinary. Smoked BBQ Chicken Recipe with a Simple to make BBQ sauce
Rub
1/2 c Lemon Pepper
1 tbsp Season Salt
1 tbsp garlic powder
1 tbsp basil
BBQ Sauce - Play this by taste and experiment with the measurements.
2 cups ketchup
1 cup brown sugar
1/4 cup worcheshire sauce
1/4 cup[ soy sauce
2 tbsp liquid smoke
1 tbsp hot sauce
2 tbsp mustard
2 tbsp vege oil
1/2 tbsp black pepper

Porchetta Pork Roast Recipe on the Traeger Pellet Grill

Ingredients
1 pork belly, skin on, 2-3 pounds
1 Tbsp Salt
3 tsp Baking soda
5 cloves of garlic
2 tbsp fennel seed course ground
Zest of 1 lemon
Season the meat side of the pork belly liberally with the salt. Flip the pork belly over and rub the baking soda evenly into the skin.
Leave the belly in the fridge overnight with the skin side facing up, uncovered

Lomo (Cured Pork Loin) | Umai Dry Bags
Lomo/Lonzino Recipe
This Italian / Spanish cured pork loin either has a paprika coating (lomo) or not (lonzino).
Dry Cure Ingredients
Pork loin, trimmed, 2-3 in / 4-5cm ∅ 1 lb (454g)
Kosher salt 1 1/2 tbsp (15g)
Sugar 1 tsp (4g)
InstaCure #2 (0.25% of meat weight) 1/4 tsp(1g)
Black pepper 2 1/4 tsp (5g)
Garlic powder 1 tsp (2g)
Dried thyme 1 tsp (2g)
Ground cloves 1/2 tsp (1g)
Onion powder 2 tsp (4g)
Instructions
Mix Dry Cure Ingredients well and rub onto meat, making sure to cover all nooks and crannies.
Transfer meat into a Ziplock or Foodsaver bag and place in your refrigerator for two weeks to cure.
After the curing process, remove meat from bag, and rinse off cure under running water.
Transfer to UMAi Dry® and place place on an open wire rack to dry in your refrigerator four to eight weeks, or until 35-40% reduction in weight.
After drying is complete, slice thin and enjoy!

Homemade Beef Jerky | On the the Traeger Grill
I have always wanted to make jerky out on the grill but was unsure how my grills would be able to hold a low temp for a long period. But now with my new Traeger grill it was easy.

Marinade
2 cups Worcestershire sauce
1 1⁄2 cups teriyaki sauce
3 teaspoons liquid smoke
1 cup soy sauce
4 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon cayenne powder
4 teaspoons black pepper
1 tablespoon sea salt
1 1⁄4 tablespoons red pepper flakes
4 tablespoons brown sugar
2 tablespoons honey
1 tablespoon maple syrup

Homemade Spicy Pickles Recipe
I just made this for a catering gig and people would not stop talking about it. So I thought I would show you how I made them. These are definitely some killer pickles

1 1/2 tbsp Kosher salt
3 tbsp turbinado sugar
2 jalapeños, sliced

1 tsp dill, chopped

Super Bowl Recipe - Peanut Butter and Jelly Chicken Wings
Super Bowl is right arond the corner and I wanted to try something a little bit different than your ordinary Buffalo Wings. So I tried this Spicy Peanut Butter & Pepper Jelly Chicken Wings Recipe!
For the sauce:
1/2 cup natural peanut butter
1/2 cup Tabasco pepper jelly
1/4 cup soy sauce
1/2 cup seasoned rice vinegar
1/4 cup fish sauce
2 tbsp hot Korean pepper paste
4 cloves crushed garlic
2 tbsp toasted sesame oil

Spicy Korean Pork Burrito With Kimchi Fried Rice
This cook was inspired by Angela from TheSquishyMonster YouTube channel when she made her grandmothers Kimchi recipe. I have always wanted to try kimchi and I thought what better that with some pulled pork. And being that I am in Southern Cali I had to wrap it in a flour tortilla. Enjoy!
